It’s always a good time for Chardonnay – but not everyone thinks so – After much negotiating with one of the founding partners of 80x, it was exclaimed that we could have our “damn” chardonnay.
This barrel fermented Chardonnay was made using 2nd and 3rd fill barrels. Two barrels were fermented wild which gives this wine the signature funk you would expect from indigenous yeasts. Expect flavours of pear, apple, and spice. The acidity is bright and fresh, keeping the palate refreshed and anticipating the next sip.
Ideal food pairings are endless thanks to the great acidity. But we still think the best match is great company and a second glass.
