And now for something completely new. When we founded the 80x Wine Company in 2015 we made a pledge to work with varieties that work well in Niagara. The opportunity to offer this wine is a firm reminder that Merlot grows well in the right sites in the region. It was a pleasure to get the chance to work with the Lizak Vineyard located in the Lincoln Lakeshore sub-appellation.
Exceptional ripeness of the fruit brings everything you have come to expect from a bottle of When Pigs Fly – Watermelon, Strawberry, Raspberry, Cranberry. The mid-palate and finish has whispers of Pink Grapefruit. Balanced acidity keeps this wine light on the palate and a perfect match for nearly anything you can put on the table next to it – while still bringing a larger mouth-feel and a lingering finish of fresh red berries.
Given that Merlot was an unexpected addition to the portfolio we felt it was appropriate for our beloved pig mascot to trade his jetpack in for a set of wings. Many thanks and credit is owed to our artist Donnie Coulter for helping us to change things up.
Writing these notes at the end of an unusually chilly May have us yearning for a hot summer. While we make these wines with the intention of having them be food friendly – is there anything better than cracking a very chilled bottle on a hot day and enjoying it into the evening?
